Signature Lemon and Lavender

This Lemon and Lavender sponge cake is one of my oldest tried and true friends. It has become my signature piece d’restisance. This springy ambrosia is about as close to perfection as your taste-buds are going to get. The syrup, made of lemon juice, steeped lavender and sugar crystals are drizzled into the cake while still warm. As you take your first bite, the sweet and sour mixture of lemon and lavender which has soaked into the confection, tempts the palate into taking the next bite. And the next.
