Spring Gardens

Easter is coming up fast and will be here before we know it. I feel the excitement that my children have in anticipation of the fun Easter Egg Hunts coming up and the chance to visit with family. My family loves to have big holiday meals together whenever we can, and Easter is no exception. We get together at someone's house and it is a wonderful day filled with family and friends. Usually, I help make the desserts for these grand family occasions. A spring garden cake is one of my favorite items to roll out.


I had made a spring garden cake before when I first started really diving into baking at 11 years old. This cake was the first really big cake I had ever made as a kid, and it was so much fun and rather crazy to make as an 11-year-old, I think the decorations took me a week to complete.


I decided to try it again with more knowledge and more experience under my belt. It was a blast to make. The vegetables are all fondant, the path is candied ginger, the dirt is crushed chocolate cookies, and the side fencing is frosting. The cake itself is carrot cake with sour cranberries, spicy candied ginger, and crunchy walnuts inside. The whole cake explodes with spring flavors; while the top is a delightful fairy sized garden.


Each vegetable was crafted by hand for the cake and placed to form a quaint garden patch that would yield delicious produce. There are strawberries, pumpkins, peas, watermelon, parsnips, carrots, tomatoes, cauliflower, and lettuce all waiting to be picked.


This cake is available to order for your Easter and Spring celebrations. Can be ordered in sheet cake form (as pictured above) which serves 20-30 people. It can also be purchased in a round cake form serving 8-10 people.
